Chocolate mousse with chantilly cream and strawberries

Indulge in nostalgic chocolate mousse desserts perfect for entertaining.
Ingredients:
  • 300g dark chocolate, chopped
  • 20g butter
  • 378.75 gm thickened cream
  • 3 eggs, separated
  • 15.00 gm caster sugar
  • 250g strawberries, hulled, halved
  • 20.00 ml orange-flavoured liqueur
  • Grated dark chocolate, to serve
Instructions:
  • In a microwave-safe bowl, combine chocolate and butter. Microwave on medium (50%) power for 2 to 3 minutes, stopping to stir halfway through, until smooth. Let it cool for 5 minutes before using.
  • Beat 1 cup of cream with an electric mixer until soft peaks form.
  • Mix the egg yolks into the chocolate until well combined. Gently fold in half of the whipped cream, followed by the remaining whipped cream. Make sure to wash and dry the beaters and bowl afterwards.
  • With an electric mixer, whip egg whites until stiff peaks form. Gently fold half of the egg whites into the chocolate mixture until well combined. Then fold in the rest of the egg whites. Fill 6 glasses with a 1/2 cup capacity each with the mixture. Chill in the refrigerator for 3 to 4 hours until set.
  • Using an electric mixer, whip 1 teaspoon of sugar with the rest of the cream until soft peaks form. Transfer to a small bowl, cover, and refrigerate. In another bowl, mix strawberries, liqueur, and the remaining sugar. Let it sit for 1 hour to macerate.
  • Finish the mousse by adding a dollop of creamy chantilly and a strawberry mixture on top. Sprinkle with grated chocolate before serving.
