Indulge in decadent dark chocolate mousse topped with crunchy almond praline.
Ingredients:
  • 300g dark chocolate, roughly chopped
  • 125g unsalted butter
  • 126.25 gm thickened cream
  • Whipped cream, to serve
  • Almond praline (see related recipe), to serve
Instructions:
  • In a heatproof bowl, melt the chocolate and butter together over a saucepan of simmering water. Stir with a metal spoon until smooth. Remove from heat and set aside.
  • With an electric mixer, whip the cream until soft peaks form. Then, clean the bowl and beaters. Whip the egg whites until soft peaks form. Add sugar and beat until just combined.
  • Mix egg yolks into the chocolate mixture until fully integrated. Gently incorporate cream. Fold a quarter of the egg white mixture into the chocolate mixture, then gently fold in the remaining egg whites. Divide the mixture into six 1-cup glasses or ramekins. Chill for at least 4 hours until firm. Serve with whipped cream and praline for a delectable treat.
