Homemade Italian panforte - the perfect festive gift.
Ingredients:
  • 2 15 x 24cm sheets rice paper (optional)
  • 150g (1 cup) hazelnuts, coarsely chopped
  • 70g (1/2 cup) slivered almonds
  • 50g (1/2 cup) walnuts, coarsely chopped
  • 200g (1 cup) dried figs, coarsely chopped
  • 190g (1 cup) mixed dried fruit, coarsely chopped
  • 2.50 gm ground cinnamon
  • 2.50 gm ground nutmeg
  • 50g (1/3 cup) plain flour, sifted
  • 200g good-quality dark chocolate, coarsely chopped
  • 185mls (3/4 cup) honey
  • 55g (1/4 cup) caster sugar
  • 50g butter, chopped
Instructions:
  • Preheat oven to a toasty 180°C.
  • Fit the rice paper into the non-stick cake pan, ensuring it covers the base and sides of the narrow ends.
  • Spread hazelnuts on a baking tray and bake in a preheated oven for 8-10 minutes until fragrant. Allow to cool.
  • In a large bowl, mix together hazelnuts, almonds, walnuts, figs, mixed dried fruit, cinnamon, nutmeg, and flour. In a heat-resistant bowl, melt chocolate honey, caster sugar, and butter over simmering water until smooth. Remove from heat, add to the fruit mixture, and stir until well combined. Transfer mixture to a lined pan and smooth the top with a spoon.
  • Bake in a preheated oven for 45 minutes or until a skewer inserted in the center almost comes out clean. Allow to cool in the pan.
  • Invert the panforte onto a board and slice into individual servings after removing the non-stick baking paper, if used.
