Ingredients:
  • 200g Milk chocolate melts, roughly chopped
  • 100g macadamia nuts, toasted
  • 125g brazil nuts, toasted
  • 100g glace cherries
  • 100g raisins, roughly chopped
  • 100g sultanas
  • 100g dessert figs, roughly chopped
  • 187.50 ml plain flour
  • 2.50 gm mixed spice
  • 235.95 gm honey
  • 70.95 gm caster sugar
  • 20.00 gm cocoa powder, to serve
Instructions:
  • Preheat the oven to 180°C and prepare a 20cm cake pan by greasing and lining the base.
  • In a bowl, mix together melted butter, nuts, fruit, flour, and spices, then create a well in the center.
  • In a saucepan, gently heat honey and sugar while stirring until sugar dissolves, about 5 minutes. Let it come to a gentle boil without stirring. Lower the heat and let it simmer for 2 minutes.
  • Combine the honey mixture with the fruit mixture, stirring swiftly to blend. Press the mixture into a cake pan and bake for 40 to 45 minutes, or until a skewer inserted into the center comes out clean. Let it cool completely in the pan.
  • Slice the delectable panforte, then sprinkle it with a light dusting of cocoa before serving.
