Indulge in decadent pecan and chocolate toffee – a delightful nutty treat.
Ingredients:
  • 1 1/2 cups sugar
  • 1 1/2 cups butter or margarine
  • 2 tablespoons light corn syrup
  • 2 tablespoons water
  • 2 cups chopped pecans, lightly toasted
  • 1 1/4 cups milk chocolate chips
Instructions:
  • Prepare a 17x12-inch half-sheet pan by lining it with foil and spraying the foil with cooking spray. In a 3-quart heavy saucepan, bring sugar, butter, corn syrup, and water to a boil over medium-high heat while stirring constantly. Lower the heat to medium and continue to cook for about 10 minutes, stirring constantly, until the temperature reaches 300°F on a candy thermometer or until a small amount of the mixture dropped into a cup of very cold water forms hard, brittle threads. Be vigilant to prevent the mixture from burning.
  • Mix in 1 cup of pecans, then promptly pour the toffee mixture into the pan. Swiftly spread the mixture to a 1/4-inch thickness using a rubber spatula. Sprinkle with chocolate chips and let sit for about 1 minute until chips are fully softened. Evenly spread out the softened chocolate over the toffee and top with the remaining 1 cup of pecans.
  • Allow the mixture to sit at room temperature for approximately 1 hour, or refrigerate until desired firmness is achieved. Break into pieces and store in an airtight container.
