Chocolate party cake

Impress at any celebration with this indulgent double-layer chocolate cake. Easy to make and sure to bring joy to all.
Ingredients:
  • 450 g soft unsalted butter plus extra for greasing
  • 650 g icing sugar
  • 4 large eggs
  • 250 g self-raising flour
  • 2 teaspoons baking powder
  • 75 g cocoa powder
  • 1 x 300 g tin of mandarin segments in juice
  • 150 g light cream cheese
Instructions:
  • Preheat the oven to 180°C/350°F/gas 4 and grease a 25cm x 30cm roasting tray, then line it with damp greaseproof paper. In a food processor, blend 250g each of butter and icing sugar. Add eggs, flour, baking powder, 50g cocoa, and a splash of mandarin juice. Blend until smooth. Spread the mixture into the tray evenly and bake for about 20 minutes until a skewer comes out clean. Let it cool on a wire rack for 5 minutes. For the buttercream, blend in the processor 200g of butter and 400g of icing sugar until fluffy. Pulse in cream cheese and a splash of mandarin juice if needed. Drain mandarin segments on paper towels. Cut the cooled cake into two rectangles. Spread a third of the buttercream on one piece, add mandarin segments, then place the other piece on top. Trim the edges if desired. Blend the remaining 25g of cocoa into the rest of the buttercream, and use it to decorate the cake as desired.
