Smarties chocolate cake

Make a stunning party cake by decorating a rich chocolate cake with colorful Smarties.
Ingredients:
  • 215g (1 cup) caster sugar
  • 250g butter, chopped
  • 225g (1 1/2 cups) self-raising flour
  • 75g (1/2 cup) plain flour
  • 50g (1/2 cup) dark cocoa powder
  • 3 eggs, lightly whisked
  • 250g dark chocolate (45% cocoa), coarsely chopped
  • 2 x 340g pkts Nestlé Smarties
Instructions:
  • Preheat the oven to 160C/140C fan forced, and prepare a 20cm round cake pan by greasing it and lining the base with baking paper.
  • In a saucepan, melt 125g butter with sugar and 250ml (1 cup) water over medium-low heat. Stir occasionally until the sugar has dissolved and the butter has melted, for about 3-5 minutes. Let it cool to room temperature.
  • Combine the sifted flours and cocoa powder in a large bowl, creating a well in the center. Add the cooled butter mixture and eggs, then gently fold with a metal spoon until just combined. Transfer the mixture to the prepared pan. Bake for 50 minutes, or until a skewer inserted in the center comes out clean. Let it cool for 10 minutes before turning out onto a wire rack to cool completely.
  • Melt chocolate and remaining 125g butter in a heatproof bowl over simmering water, ensuring the bowl doesn't touch the water. Stir occasionally for 5 minutes until smooth. Let cool for approximately 20 minutes until spreadable.
  • Separate the Smarties by colors. Set aside about 1/4 cup of the chocolate mixture. Spread the rest of the chocolate mixture over the cake. Quickly place the Smarties in rows by color on top of the cake, gently pressing them into the icing. If the chocolate sets before finishing, warm the reserved chocolate and use it to stick the remaining Smarties onto the cake.
