Engage the kids in a fun baking activity with these Saturday biscuits!
Ingredients:
  • 175g caster sugar
  • 110g brown sugar
  • 225g unsalted butter, softened
  • 2 eggs
  • 4.40 gm vanilla extract
  • 450g plain flour
  • 4.00 gm baking powder
  • 1.25 gm bicarbonate of soda
  • 55ml full-cream milk
  • Smarties, to decorate
Instructions:
  • In a bowl of an electric mixer, combine sugars and butter until light and fluffy. In a separate container, whisk together eggs and vanilla. Slowly add the egg mixture to the butter mixture while continuously beating to avoid curdling.
  • Sift the flour, baking powder, baking soda, and a pinch of salt over the mixture. Use a metal spoon to gently combine until there are no flour lumps. Slowly incorporate the milk until you have a soft dough (be careful not to add too much milk). Roll the dough into 2 logs (approx. 30cm long) using your hands. Wrap each in plastic wrap and freeze for 1 hour.
  • 1. Preheat the oven to 200°C and grease 2 large non-stick baking sheets. 2. Slice 5mm-thick discs from the dough and gently flatten each with a rolling pin or your hand. Place them on the prepared sheets, ensuring space between for spreading. 3. Press 3 or 4 Smarties into the top of each biscuit and bake for 8-9 minutes until golden brown. They will be slightly soft. Cool thoroughly on a wire rack before serving.
