Smarties rainbow cake recipe

Impress all with an easy to make, colorful Smarties-covered rainbow cake!
Ingredients:
  • 200g butter, softened
  • 165g (3/4 cup) caster sugar
  • 2 eggs
  • 150g (1 cup) self-raising flour
  • 75g (1/2 cup) plain flour
  • 35g (1/3 cup) Cocoa Powder
  • 180ml (3/4 cup) milk
  • 340g pkt Nestlé Smarties, colours separated
  • 150g pkt Nestlé Mini Smarties, colours separated
  • 100g butter, softened
  • 155g (1 1/3 cups) icing sugar mixture, sifted
  • 20.00 gm Cocoa Powder
  • 20.60 gm milk
Instructions:
  • Preheat your oven to 180C/160C fan forced, then generously grease and line the base and sides of a 20cm round cake pan.
  • In a mixing bowl, whip the butter and sugar until light and fluffy using an electric mixer. Gradually add the eggs one by one, ensuring each is well incorporated before adding the next.
  • Combine the sifted flours and cocoa powder with the butter mixture, then add the milk. Beat on low speed until combined, then switch to medium speed and beat for 2 minutes.
  • Transfer the mixture into the pan and spread it evenly. Bake for 55 minutes or until a skewer comes out clean when inserted in the middle. Allow the cake to cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
  • Make Chocolate Frosting: Use an electric beater to whip the butter until it turns white. Mix in the icing sugar, cocoa, and milk until well combined.
  • Carefully divide the cake into 2 half-moon shapes. Apply a thin layer of frosting on one half-moon, then place the other half-moon on top to create a sandwich. Cover the entire cake with a thin layer of frosting. Decorate the cake with Smarties and Mini Smarties according to the picture. Finally, serve and enjoy!
