Create irresistible Halloween cupcakes using Betty Crocker™ Super Moist™ cake mix by adding chocolate and peanut butter flavors.
Ingredients:
  • 1 box Betty Crocker™ Delights Super Moist™ Triple Chocolate Fudge Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 1 bag (8 oz) unwrapped Reese's peanut butter cups miniatures
  • 2 cups powdered sugar
  • 2 cups creamy peanut butter
  • 3/4 cup butter, softened
  • 1 teaspoon vanilla
  • 2/3 cup whipping cream
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pans) and line 24 regular-size muffin cups with paper baking cups.
  • In a large bowl, use an electric mixer to blend the cake mix, water, oil, and eggs for 30 seconds on low speed, then for 2 minutes on medium speed. Set aside 12 peanut butter cup candies for decorating. Coarsely chop the rest of the candies and fold them into the batter. Fill the muffin cups evenly with the batter.
  • Bake for 18 minutes or until a toothpick inserted in center comes out clean. Let it cool for 10 minutes, then remove from pans to cooling racks and let it cool completely.
  • In a medium bowl, use an electric mixer to blend powdered sugar, peanut butter, butter, and vanilla until smooth. Gradually add whipping cream and continue mixing until the frosting is smooth and spreadable. Frost the cupcakes and top each with a halved peanut butter cup candy for decoration.
