Chocolate Pear Oatmeal Bars

Indulgent pear bars made with oatmeal cookie mix and chocolate chips for a perfectly baked treat.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Oatmeal Cookie Mix
  • 1/2 cup cold butter, cut into small pieces
  • 2 cups finely chopped peeled pears (2 medium)
  • 1 cup semisweet chocolate chips (6 oz)
Instructions:
  • Preheat the oven to 350°F. Line an 11x7-inch pan with foil, leaving a 1-inch overhang on two opposite sides of the pan, and generously spray the foil with cooking spray.
  • Place the cookie mix in a large bowl. Use a pastry blender or two table knives to cut in the butter until the mixture resembles coarse crumbs. Stir in the egg until everything is moistened.
  • Set aside 1 1/2 cups of the cookie mixture. Press the remaining cookie mixture into the bottom of the baking pan using slightly damp fingers (the mixture will be sticky). Bake for 20 minutes. Scatter pears over the partially baked crust. Sprinkle chocolate chips on top, then finish with the reserved cookie mixture.
  • Bake until beautifully golden, allow to cool in the pan on a rack for about 2 hours, then use foil to lift out of the pan and cut into even squares.
