Pear and Chocolate Tart

Decadent chocolate pear tart with almond crust.
Ingredients:
  • 1 shortcrust pastry crust
  • 6.5 ounces 70% dark chocolate, chopped
  • 1.5 cups ground almonds
  • 2 eggs
  • 0.5 cup superfine sugar
  • 6.5 tablespoons butter, softened
  • 3 pears - peeled, cored, and quartered
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) to ensure the perfect cooking temperature.
  • Roll out the pastry to 1/4 inch thickness and line a 9-inch tart dish. Prick the pastry with a fork and freeze for 20 minutes to ensure it stays flat while baking.
  • After baking in the preheated oven for 10 minutes, set the crust aside and reduce the oven temperature to 325 degrees F (165 degrees C).
  • Fill a saucepan one-third full with water and bring it to a gentle simmer for about 5 minutes. Reduce the heat to the lowest setting. Set a heat-proof bowl over the pan without touching the water. Add chocolate to the bowl and let it melt, stirring as little as possible to keep the chocolate from separating.
  • Combine ground almonds, eggs, sugar, and butter in a bowl. Mix in warm melted chocolate until well combined. Pour chocolate mixture into the baked pastry crust.
  • Press the pears gently into the chocolate mixture on the tart.
  • Bake until the pastry is golden and the mixture is firm, about 35-45 minutes in a hot oven.
