Pear and chocolate free-form tart

Create a stunning pear and chocolate tart effortlessly.
Ingredients:
  • 375.00 ml plain flour
  • 185g butter, chilled, chopped
  • 40.00 gm chilled water
  • 40.00 gm caster sugar
  • 125.00 ml ground hazelnuts
  • 6 beurre bosc pears, peeled, cored, cut into thin wedges
  • 150g dark chocolate, chopped
  • 45.00 gm brown sugar
  • vanilla ice-cream, to serve
Instructions:
  • Preheat your oven to 180°C. In a food processor, blend the flour and butter until they resemble breadcrumbs. Incorporate the chilled water and process until the mixture almost forms a dough, adding more water if needed. Transfer the mixture to a lightly floured surface and knead gently until smooth.
  • Sandwich the dough between two sheets of baking paper and flatten it into a 40cm round shape. Transfer onto a greased baking tray, cover, and chill in the refrigerator for 30 minutes.
  • Mix caster sugar and hazelnuts in a small bowl. Spread over pastry, leaving a 3cm border. Layer pear and chocolate on top. Sprinkle with brown sugar. Fold and pleat pastry edge over the filling. Bake for 45 minutes until golden and crisp. Slice into wedges and serve warm with ice-cream.
