French Puff Pastry Tart with Pears and Chocolate

Decadent pear tart with puff pastry, chocolate, custard, and almonds.
Ingredients:
  • 0.5 cup unsalted butter
  • 0.5 cup white sugar
  • 2 tablespoons white sugar
  • 1 cup blanched almond flour
  • 1 sheet frozen puff pastry, thawed
  • 4 ounces milk chocolate, chopped
  • 3 pears - peeled, cored and sliced
Instructions:
  • Place parchment paper in a tart pan and preheat the oven to 400°F (200°C).
  • In a large bowl, cream together butter and 1/2 cup plus 2 tablespoons sugar until smooth and creamy using an electric mixer. Stir in almond flour, then add eggs one at a time, mixing well after each addition.
  • Place the puff pastry in a tart pan and gently prick it all over with a fork.
  • Melt chocolate in a double boiler until smooth and shiny, about 5 minutes, stirring often. Let it cool slightly, then generously coat puff pastry with the melted chocolate.
  • Gently pour the egg mixture over the chocolate layer on the puff pastry without mixing them. Place pear slices on top of the tart.
  • Bake in the preheated oven until the pastry is golden brown and puffed up, about 25-30 minutes.
