Best-ever French apple tart recipe

Elevate your French tart with our quick and easy homemade puff pastry hack!
Ingredients:
  • 60g butter, chopped, at room temperature
  • 55g (1/4 cup) caster sugar
  • 55g (1/2 cup) almond meal
  • 40.00 ml plain flour
  • 2 large red apples, cored, halved
  • 40.00 ml apricot jam, warmed
  • 200g (1 1/3 cups) plain flour
  • 24.00 gm icing sugar mixture
  • 140g butter, frozen, coarsely grated (see notes)
  • 80ml (1/3 cup) iced water
Instructions:
  • Sift flour and icing sugar into a large bowl, then add butter. Toss to coat using a flat-bladed knife. Pour in iced water and stir until dough begins to form. Transfer dough to a lightly floured surface and shape into a ball. Roll out into a 12 x 14cm rectangle on parchment paper using a floured rolling pin. Fold paper over pastry and chill in the fridge for 1 hour before using.
  • Preheat the oven to 190°C/170°C fan forced. Line a large baking tray with baking paper. Roll out the pastry to a 26 x 30cm rectangle on a lightly floured surface using a floured rolling pin. Transfer the pastry to the tray and chill in the fridge until needed.
  • Cream butter and sugar together using electric beaters until light and fluffy. Add vanilla and egg, mix until well combined. Gently fold in almond meal and flour until a smooth batter forms.
  • Slice apple thinly with a mandoline. Spread almond meal mixture over pastry, leaving a border. Arrange apple slices in rows over the mixture, brush with butter, then bake until golden and tender. Finish by brushing jam over apples before serving.
