Chocolate plum puddings with Frangelico sauce

Decadent chocolate plum puddings with creamy Frangelico sauce.
Ingredients:
  • 20g butter, melted, plus extra to grease
  • 1 large plum or 2 small plums, quartered, stone removed
  • 50g self-raising flour
  • 40g plain flour
  • 20.00 gm cocoa
  • 60ml milk
  • Double cream or ice cream, to serve
  • 60ml thickened cream
  • 50g dark cooking chocolate, chopped up
  • 1 1/2 tsp Frangelico
Instructions:
  • Preheat the oven to 180°C and generously coat 4 ramekins with butter. Slice the plum quarters into 4 pieces each and neatly place them at the bottom of the ramekins.
  • Combine the sifted flours and cocoa in a bowl, then add the sugar and mix until well combined.
  • Combine the egg, milk, and melted butter, then mix well. Pour the mixture over the plums. Bake in the oven for 25 minutes. Allow to cool for 2 minutes before unmolding. If needed, trim any domed tops to create a flat surface.
  • To make the sauce, combine cream and chocolate in a bowl set over simmering water. Stir until smooth. Alternatively, microwave in 20-second intervals until melted. Mix in Frangelico and spoon over the dish. Serve with cream or ice cream.
