Chocolate puddings with mint ice-cream

Indulge in a decadent chocolate self-saucing pudding for a cozy winter treat.
Ingredients:
  • 112.50 gm self-raising flour, sifted
  • 20.00 gm cocoa powder, sifted
  • 107.50 gm caster sugar
  • 60g butter, melted
  • 128.75 gm milk
  • 4 scoops peppermint choc chip ice-cream
  • 5.00 gm cornflour
  • 45.00 gm brown sugar
  • 187.50 gm boiling water
Instructions:
  • In a bowl, mix flour, cocoa powder, sugar, butter, and milk until smooth. Divide the mixture into four 1 1/4 cup-capacity ovenproof dishes.
  • Prepare the sauce by mixing cornflour, cocoa powder, brown sugar, and boiling water in a heatproof jug until smooth. Drizzle the sauce evenly over the batter in each dish.
  • Arrange dishes on a microwave-safe plate upside down. Microwave on medium (50%) for 7 to 8 minutes until the tops are firm. Allow to stand for 2 to 3 minutes, then top with ice-cream before serving.
