Chocolate salami recipe

Unique chocolate salami, a perfect festive present.
Ingredients:
  • 200g packet amaretti almond flakes biscuits
  • 125g butter, softened
  • 107.50 gm caster sugar
  • 4.40 gm vanilla extract
  • 84.98 gm milk (see notes)
  • 20.00 gm cocoa powder
  • 200g dark chocolate, melted, cooled
  • 82.50 ml almond kernels, toasted, chopped
  • 82.50 ml skinless hazelnuts, toasted, chopped
  • 82.50 ml pistachio kernels, toasted, chopped
  • 18.00 gm icing sugar mixture
Instructions:
  • Add the biscuits to a food processor and pulse until finely chopped, making sure not to over-process.
  • With an electric mixer, whip together butter, caster sugar, and vanilla until light and fluffy. Mix in milk until well incorporated. Add cocoa and mix until fully combined. Fold in chocolate and biscuit crumbs until coated evenly. Gently stir in nuts. Chill in the refrigerator for 15 to 20 minutes until slightly firmer.
  • Divide the mixture in half and place each half onto a large piece of plastic wrap. Roll each portion into a 4cm x 25cm smooth log using the plastic wrap to help shape it. Twist the ends of the plastic to seal the logs. Chill in the refrigerator for at least 6 hours or overnight until firm.
  • Unwrap the salami, sprinkle with icing sugar, gently rub to coat evenly, then wrap it in baking paper (refer to notes).
