Chocolate Toast Crunch® Streusel Muffins

Ground cereal adds a special crunch to these delicious chocolate streusel muffins.
Ingredients:
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1/4 cup water
  • 1 teaspoon vanilla
  • 3 eggs
  • 1 cup Gold Medal™ all-purpose flour
  • 3/4 cup ground Chocolate Toast Crunch® cereal*
  • 1/4 cup unsweetened baking cocoa
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup miniature semisweet chocolate chips
  • 1/4 cup Gold Medal™ all-purpose flour
  • 1/4 cup ground Chocolate Toast Crunch® cereal*
  • 1/4 cup packed brown sugar
  • 3 tablespoons butter, softened
Instructions:
  • Preheat oven to 375°F and line a standard muffin tin with 12 paper baking cups.
  • Combine granulated sugar, oil, water, vanilla, and eggs in a large bowl until well mixed. Add 1 cup flour, 3/4 cup ground cereal, baking cocoa, baking soda, salt, and fold in 1/4 cup chocolate chips. Fill muffin cups three-fourths full.
  • Combine 1/4 cup flour, 1/4 cup ground cereal, brown sugar, and butter in a small bowl. Use a fork to mix until crumbly. Add 1/4 cup chocolate chips. Spoon 2 heaping teaspoons of streusel over the batter in each muffin cup and lightly press it down.
  • Bake for 21 to 23 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 5 minutes before transferring to a cooling rack.
