Decadent chocolate bars with fluffy meringue topping.
Ingredients:
  • 1 cup shortening
  • 0.5 cup white sugar
  • 1.5 cups brown sugar, divided
  • 3 eggs, whites and yolks separated
  • 1 tablespoon cold water
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon baking soda
  • 0.125 teaspoon salt
  • 1 (12 ounce) package semisweet chocolate chips
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 9x13 inch baking pan.
  • Combine shortening, white sugar, 1/2 cup brown sugar, and egg yolks in a medium bowl. Mix well with water and vanilla. In a separate bowl, sift together flour, baking soda, and salt. Combine with the sugar and egg mixture, blend thoroughly. Stir in chocolate chips and press the mixture into the prepared pan.
  • In a spacious glass or metal mixing bowl, whisk egg whites until soft peaks form. Slowly add 1 cup of brown sugar, keep whisking until whites form stiff peaks. Spread the meringue over the base, ensuring full coverage.
  • Bake in the preheated oven until the meringue is risen and turns a light brown color, which should take about 15 to 20 minutes. Allow it to cool before slicing into bars.
