Chocolate Truffle Pie

Indulgent chocolate pie with double layers of rich, silky filling for the ultimate sweet treat.
Ingredients:
  • 1 1/4 cups chocolate cookie crumbs
  • 1/4 cup butter or margarine, melted
  • 1 bag (12 oz) semisweet chocolate chips (2 cups)
  • 1/2 pint (1 cup) whipping cream
  • 1 teaspoon vanilla
  • 2 egg yolks
  • 1/2 cup whipping cream
  • 1 tablespoon powdered sugar
  • Unsweetened baking cocoa, if desired
Instructions:
  • Combine the cookie crumbs with butter in a small bowl. Press the mixture into the bottom and up the sides of a 9-inch glass pie plate that has not been greased.
  • Melt chocolate chips in a double boiler over simmering water for 2-3 minutes, stirring often until smooth. Gradually stir in 1 cup whipping cream until well combined. Mix in vanilla and egg yolks until smooth. Cook on medium-low heat for 5-6 minutes, stirring frequently until thick and hot. Pour filling into crust and refrigerate for at least 3 hours until firm.
  • In a medium bowl, use an electric mixer to beat 1/2 cup of whipping cream and powdered sugar on high speed for 1 to 2 minutes until soft peaks form. Serve each portion with whipped cream on top and a sprinkle of cocoa powder.
