Elevate your pie with a decadent dark chocolate layer for a sophisticated twist. Quick and easy to make in just 20 minutes, it's the perfect dessert for any occasion.
Ingredients:
  • 3 oz good quality dark chocolate, chopped
  • 1/3 cup heavy whipping cream
  • 1 purchased graham cracker or vanilla cracker pie crust
  • 4 cups small strawberries
  • 1/3 cup turbinado sugar* or brown sugar
  • 4 teaspoons cornstarch
Instructions:
  • Add rich, decadent chocolate to a small mixing bowl.
  • Heat cream in a 1-quart saucepan over medium-high heat until boiling. Pour the hot cream over the chocolate in a bowl. Allow it to sit for one minute, then stir until smooth, letting the chocolate melt as you mix.
  • Transfer the rich chocolate mixture into the buttery pie crust. Chill in the refrigerator until firm, approximately 30 minutes.
  • While you wait, in a food processor or blender, blend 1 cup of strawberries until smooth. Transfer the pureed berries to a 1-quart saucepan and mix in the sugar and cornstarch. Bring the mixture to a boil over medium-high heat, stirring constantly. Reduce the heat to low and simmer for one more minute. Remove from the heat and let it cool for 20 to 30 minutes, stirring occasionally.
  • Slice off the leaf-end of the berries to create a flat surface. Once the pie is set, arrange the strawberries on top with the flat side down. Drizzle the cooled strawberry sauce over the berries ensuring each one is coated, using all the sauce.
  • Refrigerate pie for 4 hours prior to serving.
