Raw Strawberry-Filled Chocolate Truffles

Decadent homemade chocolate truffles with luscious strawberry filling, taste like gourmet chocolatier delights.
Ingredients:
  • 2 cups coconut oil, melted
  • 1 cup unsweetened cocoa powder
  • 0.5 cup raw honey, melted
  • 2 tablespoons stevia powder
  • 0.75 cup strawberries
  • 0.25 cup coconut oil
  • 0.25 cup sunflower seed butter
  • 2 tablespoons raw honey
  • 1 vanilla bean, split lengthwise and seeds scraped
  • 0.25 teaspoon Himalayan rock salt
Instructions:
  • Combine 2 cups of coconut oil, cocoa powder, 1/2 cup of honey, and stevia powder in a bowl, then whisk until smooth.
  • In a food processor, combine strawberries, 1/4 cup coconut oil, sunflower seed butter, 2 tablespoons honey, lemon juice, vanilla bean seeds, and rock salt. Blend until smooth, then transfer the mixture to a bowl and refrigerate.
  • Pour half of the luscious chocolate mixture into truffle molds or ice cube trays and pop them in the freezer for a quick chill, around 10 minutes. Let the rest of the heavenly chocolate sit at room temperature.
  • Drizzle 1 1/2 teaspoons to 1 tablespoon strawberry filling over frozen chocolate, then add remaining chocolate and fill molds to the top. Freeze truffles until set, approximately 15 minutes.
