Indulgent caramel chocolate chip cookie bars using cake mix and oats for a decadent twist.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Devil's Food Cake Mix
  • 2/3 cup butter or margarine, softened
  • 1 egg
  • 2 cups quick-cooking or old-fashioned oats
  • 1 bag (14 oz) caramels, unwrapped
  • 1/4 cup milk
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup chopped pecans or walnuts, if desired
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pan). Grease or spray a 13x9-inch pan generously. In a large bowl, combine cake mix, butter, and egg, then mix with an electric mixer on low speed until well blended.
  • Combine oats until the mixture is crumbly, using your fingers if needed. Set aside 1 cup of the cake mixture. Press the rest of the mixture into the pan, using plastic wrap or waxed paper to press it down if it's sticky.
  • Heat caramels and milk in a large saucepan until melted, then pour over chocolate layer. Sprinkle with chocolate chips and pecans, crumble reserved cake mixture on top.
  • Bake for 24 to 29 minutes until caramel bubbles around the edges and the top appears crisp. Run a knife along the sides of the pan to loosen the bars. Allow to cool completely for about 1 hour and 30 minutes. Cut into 6 rows by 4 rows and store tightly covered.
