Chocolate-Cherry Cola Cake

Modern twist on a southern classic: Cherry cola cake with cake mix.
Ingredients:
  • 1 jar (10 oz) maraschino cherries, drained, 1/4 cup liquid reserved
  • 1 box Betty Crocker™ Super Moist™ Devil's Food Cake Mix
  • 1 cup cherry cola carbonated beverage
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 tub (12 oz) Betty Crocker™ Whipped Vanilla Frosting
  • 1 cup marshmallow creme
  • 24 maraschino cherries with stems, well drained, if desired
Instructions:
  • Preheat the oven to 350°F (325°F for dark or nonstick pan) and lightly spray the bottom of a 13x9-inch pan with baking spray containing flour. Chop the cherries and set them aside.
  • Combine cake mix, cola, oil, eggs, and 1/4 cup cherry liquid in a large bowl. Mix on low speed for 30 seconds, then increase to medium speed for 2 minutes, scraping the bowl occasionally. Fold in chopped cherries and pour into pan.
  • Bake for 34 to 42 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely, approximately 1 hour.
  • Combine the frosting and marshmallow creme in a small bowl until creamy. Frost the cake and garnish each slice with 2 cherries including stems. Store the cake loosely covered.
