Indulgent chocolate and cherry holiday cookies - irresistible and worth every bite!
Ingredients:
  • 3/4 cup butter or margarine, softened
  • 1 cup sugar
  • 3 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons almond extract
  • 1/4 cup maraschino cherries, finely chopped and drained on paper towels
  • 3 drops red food color
  • 1 teaspoon vanilla
  • 1 tablespoon milk
  • 1/4 cup unsweetened baking cocoa
Instructions:
  • In a large bowl, blend together butter, sugar, and eggs with an electric mixer until smooth. Mix in flour, baking powder, and salt until fully combined. Transfer half of the dough to a separate medium bowl.
  • Mix almond extract, cherries, and food color into half of the dough until well blended. Separate the cherry dough into two equal portions. Wrap each portion in plastic wrap and refrigerate for about 45 minutes until it becomes firm.
  • Mix vanilla, milk, and cocoa with the plain dough. Separate the chocolate dough in half. Wrap each half of the chocolate dough in plastic wrap and refrigerate for about 45 minutes until firm.
  • Place the chocolate dough between 2 sheets of waxed paper and roll into a 10x7-inch rectangle. Do the same with the cherry dough. Chill both for about 30 minutes until firm. Remove the top sheets of waxed paper from both doughs, then flip the cherry dough onto the chocolate dough. Roll the doughs together into a log, starting from the long side. Wrap in plastic wrap and refrigerate for 2 hours. Repeat the process with the remaining dough parts.
  • Preheat the oven to 350°F. Use a sharp knife to slice the dough rolls into 1/4-inch slices. Arrange the slices 1 inch apart on an ungreased cookie sheet.
  • Bake for 8 to 11 minutes until the surface looks dull. Transfer to a wire rack to cool.
