Chocolate-Covered Marzipan and Walnut Pralines

Decadent Christmas marzipan treats: blending sugar, liqueur, and walnuts, then shaping and dipping in chocolate with a walnut topping.
Ingredients:
  • 3.5 (4 ounce) packages marzipan
  • 1 cup powdered sugar, divided
  • 1 cup chopped walnuts
  • 2 teaspoons rum
  • 2 teaspoons maraschino liqueur
  • 5 (3 ounce) bars dark chocolate, finely chopped
  • 50 walnut halves
Instructions:
  • Combine marzipan, 3/4 cup powdered sugar, walnuts, rum, and maraschino liqueur on a clean work surface and knead until smooth.
  • Dust clean work surface with the rest of the powdered sugar. Roll out marzipan and cut into desired shapes.
  • Prepare a baking sheet by lining it with waxed paper and placing a wire rack on top.
  • Melt 3/4 of the chocolate in a double boiler over simmering water. Stir often, scraping the sides with a rubber spatula to prevent burning, until smooth (about 5 minutes). Remove from heat and stir in the rest of the dark chocolate until fully melted and smooth.
  • Skewer each praline and dip into luscious melted chocolate, allowing the excess to drip off. Place them on a wire rack to set, then delicately crown each piece with a walnut half.
  • Let chocolate set until firm. Keep pralines in airtight containers.
