Award-winning cookie bars topped with baked crumbled cookies over a fluffy cream cheese layer.
Ingredients:
  • 1 pouch (1 lb 1.5 oz) Betty Crocker™ peanut butter cookie mix
  • 3 tablespoons vegetable oil
  • 1 tablespoon water
  • 1 egg
  • 1 1/4 cups semisweet chocolate chips
  • 1/4 cup butter or margarine
  • 1 package (8 oz) cream cheese, softened
  • 2/3 cup crunchy or creamy peanut butter
  • 3/4 cup powdered sugar
  • 1/2 cup whipping cream
Instructions:
  • Preheat the oven to 350°F. Lightly coat only the bottom of a 13x9-inch pan with cooking spray. Combine the cookie base and topping ingredients in a large bowl until a soft dough forms. Shape the dough into 6 (1-inch) balls. Place the balls 2 inches apart on an ungreased cookie sheet and flatten them in a crisscross pattern using a fork.
  • Press the remaining dough into the pan and bake the cookies and base for 10-12 minutes until the edges are a light golden brown. Let it cool for 10 minutes, then set aside the cookies for topping.
  • Place the chocolate chips and butter in a small microwavable bowl. Microwave on High for 1 minute to 1 minute 30 seconds, stirring every 30 seconds until melted and smooth. Spread the mixture evenly over the bars and refrigerate for about 30 minutes until firm.
  • In a medium bowl, combine cream cheese, peanut butter, powdered sugar, and whipping cream. Use an electric mixer on low speed until blended, then switch to high speed for about 2 minutes until light and fluffy. Spread mixture over the chocolate layer.
  • Crush the remaining cookies and scatter them over the cream cheese layer. Gently press down. Chill until firm, approximately 30 minutes. To serve as bars, slice into 9 rows by 4 rows. Keep refrigerated with a cover.
