Chocolate-dipped fortune cookies

Make homemade chocolate-dipped fortune cookies for Chinese New Year - customize your own fortunes!
Ingredients:
  • 2 egg whites, at room temperature
  • 70g (1/3 cup) caster sugar
  • 2.20 gm vanilla extract
  • 60g butter, melted, cooled
  • 75g (1/2 cup) plain flour
  • 200g white chocolate melts, melted
  • Assorted edible glitter, sprinkles or coloured sugar, to decorate
Instructions:
  • Preheat the oven to 180C/160C fan forced. Trace three 8cm-diameter circles on a sheet of baking paper, spacing them about 5cm apart. Flip the paper over and place it on a baking tray.
  • Whisk egg whites until frothy with electric beaters for 2 minutes. Add sugar and vanilla, then whisk until combined. Slowly incorporate butter. Sift in flour and salt, then fold in with a metal spoon until combined.
  • Spoon a generous amount of batter into the center of each marked circle on a lined tray. Use the back of the spoon to evenly spread the batter to the edges. Bake until golden around the edges, 5-7 minutes.
  • Efficiently slide a spatula under each cookie to loosen and place a fortune message on top of each. Fold the hot biscuits in half, pressing edges together, then bend them in half the other way over the rim of a glass to create crescent shapes. Hold for a few seconds and place the cookies in muffin pan holes to retain their shape while cooling. Repeat the baking and folding process with the remaining batter.
  • Dip cookies in melted chocolate, letting excess drip off. Arrange on a baking tray lined with parchment paper. Sprinkle with decorations and allow to set.
