Choc-dipped fortune cookies

Personalize fortune cookies with your own messages for a special touch.
Ingredients:
  • 60g butter, softened
  • 107.50 gm caster sugar
  • 4.40 gm vanilla extract
  • 2 egg whites
  • 82.50 ml plain flour
  • Pinch of salt
  • 190.00 gm Dark Chocolate Melts
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced. Trace 4 circles on a sheet of baking paper using an 8cm-round cutter. Flip the baking paper over and place it on a greased baking tray.
  • With an electric mixer, whip butter, sugar, and vanilla until light and fluffy. Gradually add in egg whites one by one. Reduce speed and mix in flour and salt until just combined.
  • Place 2 level teaspoons of mixture onto each circle and use the back of a spoon to spread and fill the circles.
  • Bake until cookies are golden brown around the edges. While warm, place a paper message on half of each cookie. Fold cookies in half, pressing the edges together, then carefully shape them into crescents. Cool by placing on the rim of a glass.
  • Continue the process with the remaining batter to create a total of 24 fortune cookies.
  • 1. Put chocolate melts in a microwave-safe bowl. Microwave at 50% power for 1 to 2 minutes until smooth, stirring midway with a metal spoon. 2. Dip half of each cookie into the melted chocolate, letting any extra chocolate drip back into the bowl. 3. Place on a baking tray lined with parchment paper. Let them sit for 20 minutes to firm up.
