Impress your holiday guests with these delectable chocolate-honeycomb bites, perfect for parties or dessert decorations!
Ingredients:
  • 275g caster sugar
  • 60ml golden syrup
  • 60ml glucose syrup
  • 6.25 gm bicarbonate of soda
  • 100g dark chocolate, melted
Instructions:
  • Prepare a 20cm square cake pan by lining it with baking paper, making sure to leave some extra paper hanging over the sides.
  • In a large saucepan over gentle heat, combine sugar, golden syrup, glucose syrup, and 1/2 cup (125ml) water. Stir gently for 5 minutes or until the sugar has completely dissolved.
  • Turn up the heat to high and bring the mixture to a boil. Cook without stirring for 10 minutes or until the temperature reaches 145°C on a sugar thermometer or reaches the hard crack stage. To test the consistency, let it sit until the bubbles settle, then carefully drop 1 teaspoon of toffee into a glass of iced water - it should harden immediately. Remove the mixture from heat and allow the bubbles to subside.
  • Swiftly sieve the bicarbonate of soda over the rich toffee, then stir gently with a metallic spoon until well mixed. Transfer the mixture into the lined pan and let it rest for 3 hours to cool completely.
  • Transfer the freshly made honeycomb to a clean work surface, cut it into pieces, then set it aside. Next, place the chocolate in a bowl and line a baking tray with baking paper. Dip each piece of honeycomb into the chocolate, place them onto the lined tray, and let them set for 30 minutes. Store the chocolate-covered honeycomb in an airtight container at room temperature for up to 4 days.
