Whip up these fun and easy cookies for a delicious snack!
Ingredients:
  • 150g (1 cup) plain flour
  • 75g (1/2 cup) self-raising flour
  • 60g (1/3 cup) icing sugar mixture
  • 20.00 gm custard powder
  • 100g chilled butter, chopped
  • 50g light cream cheese, chopped
  • 1 egg
  • 4.40 gm vanilla essence
  • 100g dark or milk chocolate, melted
Instructions:
  • Combine the plain flour, self-raising flour, icing sugar mixture, and custard powder in a large bowl. Use your fingertips to rub the butter and cream cheese into the mixture until it resembles fine breadcrumbs. Create a well in the center.
  • In a jug, combine the whisked egg and vanilla. Pour the mixture into the flour mixture. Use a knife to stir in a cutting motion until the dough starts to come together. Transfer the dough to a floured surface and knead until smooth. Shape the dough into a 24cm long and 4cm thick log. Wrap in plastic wrap and chill in the fridge for at least 1 hour until firm.
  • 1. Preheat your oven to 180°C and line two baking trays with non-stick baking paper. 2. Slice the log into 24 pieces, each about 1cm thick. 3. Arrange the slices 3cm apart on the trays. 4. Bake for 12-15 minutes until lightly golden. 5. Let them cool for 5 minutes before transferring to a wire rack to cool completely.
  • Drizzle the dessert with decadent melted chocolate and chill in the fridge until firm, about 10 minutes.
