Chocolate-Glazed Cherry Shortbread Bars

Elevate your dessert table with delicious cherry-ginger shortbread bars.
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 1/3 cup cornstarch
  • 1 cup butter, softened
  • 3/4 cup powdered sugar
  • 1/4 cup granulated sugar
  • 3/4 cup dried cherries, coarsely chopped
  • 1/2 cup semisweet chocolate chips
Instructions:
  • Preheat oven to 350°F. Line a 13x9-inch pan with foil, leaving an overhang on 2 opposite sides. Spray the foil with cooking spray.
  • Combine flour, cornstarch, and salt in a small bowl. In a separate large bowl, cream together butter, powdered sugar, and granulated sugar with an electric mixer until well combined and fluffy. Gradually mix in the flour mixture on low speed, then fold in cherries before pressing the mixture into a pan.
  • Bake for 30 to 35 minutes until lightly golden. Allow to cool completely in the pan on a cooling rack for about 30 minutes.
  • Place chocolate chips in a small microwavable bowl and microwave on High for 30 to 60 seconds, stirring once, until smooth. Use a fork to drizzle the melted chocolate over bars. Allow it to stand until firm for about 2 hours. Using foil, lift the bars out of the pan and cut into 6 rows by 4 rows.
