Indulgent chocolate-orange fudge slice, a lunch box favorite.
Ingredients:
  • 250g plain sweet biscuits (such as granita)
  • 125g unsalted butter, melted
  • 1 egg, lightly beaten
  • 1 large orange, rind finely grated
  • 166.65 gm thickened cream
  • 141.90 gm caster sugar
  • 60g dark chocolate, melted
  • 10.00 gm cocoa powder
  • 187.50 gm icing sugar mixture
  • 10.00 gm unsalted butter, softened
  • 1 orange, juiced
  • 3 drops orange food colouring, optional
Instructions:
  • Preheat your oven to 180°C. Grease a 3cm-deep, 17cm x 28cm (base) slab pan and line it with baking paper as instructed.
  • Crush biscuits in a food processor until fine crumbs form. Add butter and process until mixture is well combined. Press the mixture into a pan and refrigerate until firm, about 30 minutes.
  • Prepare the filling by combining egg, orange rind, cream, sugar, chocolate, and cocoa in a large bowl. Mix thoroughly before pouring over the biscuit base. Bake for 25 minutes or until the top is set. Let it cool completely in the pan before serving.
  • Prepare a flavorful icing by combining icing sugar, butter, and 2 tablespoons of zesty orange juice in a small bowl until velvety smooth. Gently swirl in food coloring, adding one drop at a time for the perfect hue.
  • Frost the slice and cut into serving pieces before enjoying.
