Upgrade caramel corn with coconut, almonds, and chocolate for a gourmet twist.
Ingredients:
  • 2 (3.5 ounce) packages microwave popcorn
  • 0.5 cup butter
  • 1 cup brown sugar
  • 0.25 cup corn syrup
  • 0.5 teaspoon baking soda
  • 1 cup chocolate chips
  • 1 cup sliced almonds
  • 0.5 cup shredded coconut
Instructions:
  • Preheat your oven to a toasty 250 degrees F (120 degrees C).
  • Follow the manufacturer's directions to cook the popcorn, then transfer it to a large bowl. Melt butter in a saucepan over medium heat, add brown sugar, salt, and corn syrup, and bring to a boil. Simmer for 5 minutes, stirring constantly. Remove from heat, and gently stir in vanilla extract and baking soda.
  • Drizzle the caramel over the popcorn and mix thoroughly. Toss in the chocolate chips and almonds, stirring until evenly combined. Transfer the mixture into two sizable baking pans and generously sprinkle with shredded coconut.
  • Roast in a hot oven for an hour, remembering to stir every 15 minutes.
