Indulge in rich, chewy chocolate brownie cookies with a crunchy exterior.
Ingredients:
  • 1 1/3 cups Gold Medal™ all-purpose flour
  • 1 cup sugar
  • 1/3 cup packed brown sugar
  • 1/2 cup Dutch process cocoa
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup butter, softened
  • 3 large egg whites
  • 2 teaspoon vanilla
  • 1/4 cup powdered or icing sugar
Instructions:
  • Preheat the oven to 350°F and prepare cookie sheets by spraying with nonstick cooking spray or lining with parchment paper. In a large bowl or food processor, mix together flour, sugar, brown sugar, cocoa, baking powder, and salt, ensuring there are no lumps of brown sugar. Add the butter and mix until the mixture is crumbly. If using a food processor, transfer the mixture to a large bowl.
  • Combine the eggs and vanilla, then gently stir until a cohesive dough forms. Don't worry if the mixture seems dry initially, keep stirring or use your hands until the dough comes together.
  • Dust a shallow dish with 1/4 cup powdered sugar. Shape dough into 1 1/2-inch balls, then coat with powdered sugar. Arrange 2 inches apart on baking sheets. Bake for 12 to 14 minutes until edges are set but centers are soft. Cool on sheets for 1 to 2 minutes before transferring to a rack.
