Delightful coconut chocolate chip macaroons: chewy, lightly sweet, and flourless.
Ingredients:
  • 3 egg whites
  • 0.25 cup white sugar
  • 2 tablespoons almond paste
  • 1 cup flaked coconut
  • 0.5 cup miniature semisweet chocolate chips
  • 0.5 teaspoon cream of tartar
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C) and prepare your cookie sheets by lining them with parchment paper or lightly greasing them.
  • Combine sugar and almond paste in a medium bowl by blending with your fingers until fully incorporated. Add coconut and chocolate chips, mix well. In a separate clean bowl, whip egg whites and cream of tartar until stiff peaks form. Lighten the coconut mixture by folding in half of the whipped egg whites, then gently fold in the rest. Drop rounded teaspoonfuls of batter onto prepared cookie sheets.
  • Bake in a preheated oven for 20 minutes, or until the tops are lightly browned. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
