Family-friendly pasta dish, perfect for any night!
Ingredients:
  • 350g penne rigate
  • 18.20 gm olive oil
  • 2 chorizo sausages, thinly sliced diagonally
  • 200g button mushrooms, thinly sliced
  • 1 x 400g can diced tomatoes
  • 100g baby spinach leaves
Instructions:
  • Cook the pasta in a large pot of boiling salted water according to the package instructions until it is "al dente." Drain the pasta.
  • In a large frying pan over high heat, heat the oil until shimmering. Add the chorizo and cook until browned, about 3-4 minutes, turning occasionally. Stir in the mushroom and garlic, and cook until the mushrooms are tender, about 2 minutes. Finally, add the tomatoes and simmer until the sauce thickens slightly, about 2 minutes.
  • Combine the pasta with the tomato mixture and gently toss. Add the spinach and toss until just wilted. Season with salt and pepper to taste.
  • Divide the pasta into individual serving bowls and generously sprinkle with shaved parmesan. Enjoy right away.
