Elevate hot dogs with zesty chorizo and savory mushrooms in a simple sub creation.
Ingredients:
  • 6 (about 500g) fresh chorizo sausages
  • 250g portobello mushrooms, cut into wedges
  • 1 large red onion, cut into wedges
  • 36.40 gm extra virgin olive oil
  • 285g jar Piquillo peppers, drained
  • 2 tsp red wine vinegar
  • 6 long crusty bread rolls, warmed, split
  • Aioli, to serve
  • Baby rocket, to serve
Instructions:
  • Preheat a chargrill pan or barbecue grill over medium-high heat. Grill the chorizo, turning occasionally, for 15 minutes or until fully cooked. Transfer to a plate and cover with foil to keep warm.
  • In a big bowl, mix the mushrooms and onion, season, and drizzle with oil. Saute the mushrooms and onion until charred and tender, about 6 minutes. Transfer to a bowl. Quickly saute the peppers until warmed through, about 1-2 minutes. Add the peppers to the mushroom mixture, drizzle with vinegar, and toss well to combine.
  • Evenly coat the bread rolls with flavorful aioli. Layer on the savory mushroom mixture, spicy chorizo, and fresh rocket for a delectable combination.
