Chorizo and mushroom pizza

Elevate your pizza by adding zucchini ribbons before topping with flavorful chorizo. Serves 6 for a delicious light meal.
Ingredients:
  • 80ml pizza sauce
  • 1 chorizo sausage, thickly sliced
  • 50g sliced pepperoni
  • 75g olive
  • 200g brown cup mushrooms, thickly sliced
  • 135g drained Chargrilled Peppers (roast capsicum), torn
  • 100g vine-ripened cherry tomatoes
  • 100g bocconcini, torn
  • 185ml water
  • 2 tsp (7g/1 sachet) dried yeast
  • 5.00 gm caster sugar
  • 300g plain flour
  • 2.40 gm salt
  • 18.20 gm olive oil
Instructions:
  • Prepare the pizza dough by mixing together water, yeast, and sugar in a jug. Let it sit for 5 minutes until it becomes frothy. In a large bowl, combine flour and salt. Add the yeast mixture and oil, then gently stir until just mixed using a round-bladed knife. Transfer the dough to a lightly floured surface and knead for 5 minutes until smooth and elastic. Place the dough in an oiled bowl, cover with plastic wrap, and let it rest in a warm, draft-free spot for 1 hour or until it doubles in size.
  • Preheat oven to 230C. Dust a large baking tray with flour. Roll the dough out on a floured surface to form a 35cm x 45cm rectangle. Transfer the dough to the tray and spread evenly with pizza sauce.
  • Start by heating a medium frying pan over medium-high heat. Sear the chorizo for 2 minutes on each side until they turn golden brown. Then, top the pizza with the chorizo, pepperoni, olives, mushrooms, bell peppers, tomatoes, and bocconcini cheese.
  • Bake for 15 minutes or until the pizza is golden brown and heated through, then cut into squares before serving.
