Chorizo and mushroom pasta

Whip up a quick and delicious dinner in just 25 minutes with simple key ingredients.
Ingredients:
  • 400g penne rigate
  • 200g chorizo
  • 1 red capsicum, chopped
  • 200g button mushrooms, sliced
  • 2 x 400g cans crushed tomatoes with Italian herbs
  • shaved parmesan cheese, to serve
  • Salt, to season
Instructions:
  • Boil pasta in a generously salted pot of water according to package instructions until al dente.
  • Heat a large, non-stick frying pan over medium heat. Add chorizos and cook, stirring occasionally, for 5 minutes until golden brown. Transfer to a bowl.
  • Sauté capsicum and mushrooms in a hot pan until slightly softened, approximately 5 minutes. Return chorizos to the pan, add tomatoes, bring to a boil, then simmer until slightly thickened, about 5 minutes.
  • After cooking the pasta, toss it back into the saucepan along with the chorizo mixture. Season with salt and pepper, then toss everything together until well combined. Sprinkle with parmesan before serving.
