Make an effortless and delicious oven-baked breakfast for a group.
Ingredients:
  • 200 g Triple Smoked Pan sized Bacon
  • 2 x 125g chorizo, halved lengthways
  • 4 medium portabello mushrooms
  • 120g bag spinach leaves
  • 4 eggs
  • Dukkah, serve
  • Buttered toast, to serve
Instructions:
  • 1. Preheat your oven to 180C/160C fan-forced and line two large oven trays with non-stick baking paper. Grease an 80ml (1/3 cup) capacity silicone muffin tray with oil. Arrange bacon on one tray in a single layer. On the other tray, place chorizo, three-quarters of spinach leaves, and mushrooms, cap side up.
  • Line the muffin holes generously with spinach. Crack an egg into each one and cover with foil. Bake in the oven for 20 minutes or until bacon and chorizo are golden, spinach is wilted, mushrooms are tender, and eggs are cooked through. Transfer to a serving platter, sprinkle with Dukkah, and serve with buttered toast.
