Delicious summer zucchini and chorizo toastie, perfect for a light meal.
Ingredients:
  • 2 chorizo sausages, thinly sliced
  • 8 small flour tortillas
  • 2 large zucchinis, coarsely grated
  • 125.00 ml mint leaves, plus extra to serve
  • 120g cheddar cheese
  • Olive oil, to fry
  • Lemon wedges, to serve
Instructions:
  • Preheat your oven to 100C.
  • Preheat a large frypan over medium-high heat. Sear chorizo for 3 minutes, turning occasionally until golden brown. Place on a paper towel-lined plate to drain excess oil. Clean the frypan.
  • Lay the tortillas on a tidy work surface. Sprinkle chorizo, zucchini, mint, and cheddar over one half of each tortilla. Fold the tortillas in half to create semi-circles.
  • Drizzle olive oil in a heated frypan over medium-high heat. Cook 2 quesadillas for 2 minutes until golden underneath. Flip and cook for 1 more minute until tortillas are golden and cheese is melted. Transfer to a baking tray, cover with foil, and keep warm in the oven. Repeat with the remaining quesadillas.
  • Slice the quesadillas in half and garnish with additional mint leaves and lemon wedges for squeezing.
