Easy and fun DIY gingerbread house with store-bought ingredients, perfect for kids to join in the fun!
Ingredients:
  • 80g (1/2 cup) icing sugar mixture, sifted
  • 3 savoiardi (sponge finger biscuits)
  • 2 Hundreds & Thousands biscuits
  • 4 Tina Wafer biscuits
  • 2 Iced Vo Vo biscuits
  • 2 spearmint leaf lollies
  • 1 licorice allsort, halved diagonally
  • Icing sugar, extra, to dust
Instructions:
  • In a bowl, combine icing sugar with just enough cold water to create a thick paste. Transfer the mixture into a piping bag fitted with a 4mm plain nozzle.
  • Trim 1 long side from 2 savoiardi biscuits and both long sides from the remaining biscuit. Keep 1 trimmed piece. Spread icing along the cut sides, then sandwich the biscuits together, pressing gently to stick.
  • On a clean work surface, place Hundreds & Thousands biscuits pink-side down. Pipe icing along the 2 short sides of each biscuit. Press the edge of 1 wafer into the icing on 1 biscuit and repeat with another wafer on the opposite side. Top with another Hundreds & Thousands biscuit icing-side down to form 4 walls. Allow to set. Pipe icing along the base of the walls. Place on top of the savoiardi biscuit base and gently press down. Allow to set.
  • Cut one of the remaining wafers diagonally to create two triangles. Spread icing along the longest side of each wafer triangle and attach them to the front and back walls of the house. Set aside to set. Place Iced Vo Vo biscuits, pink-side down, on a clean surface. Spread icing along two short sides of each biscuit and press them, icing-side down, onto the edges of the wafer triangles to form the roof. Set aside to set. Spread icing along the cut side of the reserved savoiardi biscuit and place it along the roof. Set aside to set.
  • Cut a small square from the leftover wafer for a door. Use icing to attach it at one end of the house. Use icing to attach leaf lollipops in front of the house for trees. Use icing to attach a licorice allsort half to the side of the roof for a chimney. Let it set. Dust with icing sugar before serving.
