Gingerbread biscuits

German Christmas gingerbread biscuits inspired by Hansel and Gretel's fairy tale house, created by the Brothers Grimm in the 1800s.
Ingredients:
  • 100g butter
  • 200g (1 cup, firmly packed) brown sugar
  • 250ml (1 cup) treacle
  • 600g (4 cups) plain flour
  • 150g (1 cup) self-raising flour
  • 10.00 gm ground ginger
  • 10.00 gm ground cinnamon
  • 1 1/2 tsp ground cloves
  • 2.50 gm bicarbonate of soda
  • 2 egg whites
  • 420g (2 2/3 cup) pure icing sugar
  • 5.30 gm fresh lemon juice
Instructions:
  • Combine the butter, sugar, and treacle in a saucepan over low heat. Stir until the butter has melted and the sugar is dissolved. Let it cool for 10 minutes before using.
  • In a large bowl, mix the butter with the egg. Sift in the flour, ginger, cinnamon, cloves, and bicarbonate of soda. Stir until well combined. Transfer the mixture to a lightly floured surface and knead gently until smooth. Shape it into a disc, cover with plastic wrap, and refrigerate for 1 hour.
  • - Preheat your oven to 180°C and line 2 baking trays with non-stick baking paper. - Divide the dough into 2 equal portions and roll out one portion on a lightly floured surface until it is 5mm thick. - Use a Christmas tree-shaped cutter that is 12.5cm long to cut out trees from the dough and place them on the lined trays. - Bake for 5 minutes or until the trees are golden. - Let them cool on the trays for 5 minutes before transferring them to a wire rack to cool completely. - Repeat the process with the remaining dough.
  • In a bowl, lightly beat egg whites with a wooden spoon until foamy. Stir in sifted icing sugar until smooth. Add lemon juice and mix well. Transfer icing into piping bags with different nozzles and decorate the biscuits. Allow to set for 1 hour before serving.
