Christmas coconut lemon bars

Lemon coconut dessert - buttery and zesty delight.
Ingredients:
  • 225g plain flour
  • 80g icing sugar mixture
  • 180g chilled butter, chopped
  • 315g caster sugar
  • 20.00 ml finely grated lemon rind
  • 125ml lemon juice
  • 4.00 gm baking powder
  • 65g shredded coconut
Instructions:
  • Preheat your oven to 180C while you grease and line a 20 x 30cm lamington pan with baking paper, leaving the edges to hang over the sides.
  • Combine flour, icing sugar, and butter in a food processor until the mixture resembles fine breadcrumbs. Press the mixture evenly over the base of the prepared pan using the back of a spoon.
  • Bake in the oven until lightly golden, typically around 15 minutes.
  • In a large bowl, combine whisked eggs, sugar, lemon rind and juice, baking powder, and most of the coconut. Pour this mixture over the base and sprinkle the rest of the coconut evenly on top. Bake until golden brown and set, about 20 minutes. Let it cool in the pan before cutting into squares to serve.
