Delicious pumpkin loaf bursting with nuts, chocolate chips, and sweet icing. Double the recipe for three heavenly 8x4 inch loaves.
Ingredients:
  • 0.5 cup butter, softened
  • 1 cup white sugar
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground ginger
  • 0.75 cup pumpkin puree
  • 6 ounces semi-sweet chocolate chips
  • 1 cup chopped walnuts, divided
  • 0.25 cup confectioners' sugar
  • 2 tablespoons heavy cream
  • 1 pinch ground nutmeg
  • 1 pinch ground cinnamon
Instructions:
  • Begin by preheating your oven to 350 degrees F (175 degrees C), then generously grease and flour a 9x5 inch loaf pan.
  • Cream together fluffy butter and sugar in a large bowl. Beat in eggs one at a time. In a separate bowl, combine flour, baking soda, salt, 1 tsp cinnamon, 1/2 tsp nutmeg, and ginger. Alternately stir dry ingredients and pumpkin puree into sugar mixture. Fold in chocolate chips and 3/4 cup walnuts. Spoon batter into loaf pan and sprinkle remaining walnuts on top.
  • Bake in the preheated oven for 65 minutes or until a knife inserted into the loaf comes out clean. Allow to cool, then remove from the pan and drizzle with icing.
  • Combine confectioners' sugar and heavy cream with a dash of cinnamon and nutmeg, stirring until velvety smooth to create the icing.
