Christmas ice creams

Put a modern spin on classic Christmas flavors with these sophisticated ice cream treats.
Ingredients:
  • 5 egg yolks
  • 110g caster sugar
  • 300ml pure (thin) cream
  • 1 tsp freshly grated nutmeg
  • 40.00 ml rum
  • 40.00 ml brandy
  • Raspberries, to serve
  • Walnut crumbs (see below), to serve
  • 20.00 gm self-raising flour
  • 34.40 gm demerara sugar (see note)
  • 25g walnut
  • 30g chilled unsalted butter, chopped
Instructions:
  • In a bowl, combine egg yolks and sugar, then whisk with electric beaters until thick and pale. Set aside.
  • In a saucepan, heat the cream over medium heat until it is just below boiling. Pour the hot cream over the yolk mixture, stirring well to combine. Transfer the mixture back to the saucepan and cook over low heat, stirring constantly, for 3-4 minutes until thick enough to coat the back of a spoon. Remove from heat, strain into a bowl, cover the surface with baking paper, and allow the custard to cool completely.
  • Whisk the thickened cream until soft peaks form, then gently mix in the custard, vanilla, nutmeg, rum, and brandy. Pour the mixture into an ice cream machine and churn following the manufacturer's instructions. Alternatively, pour the mixture into a shallow container and freeze for 2 hours until the edges are frozen. Using electric beaters, whip the mixture, then return it to the freezer. Repeat this process 2-3 times.
  • Prepare eight dariole moulds or shallow plastic containers by lining them with plastic wrap. Fill the moulds with the ice cream mixture and let it freeze for a minimum of 4 hours or overnight until it is solid.
  • For walnut crumbs: Preheat the oven to 180°C and line a baking tray with baking paper. Combine flour, sugar, cinnamon, and nuts in a food processor until mixed. Add butter and pulse until mixture forms large clumps. Spread on the baking tray and bake for 20 minutes until golden, stirring once. Let it cool, then break into small clumps before serving.
  • When ready to serve, gently invert the ice creams onto a serving platter, removing the plastic wrap. Sprinkle with fresh raspberries and crunchy walnut crumbs for a delightful finish.
