Festive candy cane ice cream cups, a delightful Christmas treat for all ages.
Ingredients:
  • 1 vanilla bean
  • 600g full cream milk
  • 200g pouring (whipping) cream
  • 180g white sugar
  • 6 egg yolks
  • 1 pinch sea salt (optional)
  • 110 g candy canes (approx 8)
Instructions:
  • Split the vanilla bean lengthwise and scrape out the seeds, reserving the pod. Place the scraped seeds and the reserved pod in the mixing bowl along with full cream milk, cream, sugar, egg yolks, and optional salt. Cook at 90°C for 8 minutes on speed 2. Remove the vanilla pod carefully.
  • Pour the mixture into about 3 ice cube trays and let it cool completely. Clean and dry the mixing bowl before transferring the trays to the freezer for at least 10 hours.
  • Crush candy canes in the mixing bowl on high speed for 2 seconds until finely crushed. Transfer the crushed candy canes to a separate bowl and set aside.
  • Add the ice cream cubes to the mixing bowl and blend on high speed for 20 seconds. Scrape down the sides of the bowl with a spatula and blend for another 20 seconds until smooth.
  • Mix in the saved candy cane pieces for 10 seconds on speed 3 until just combined. Fill 12 silicone moulds with the ice cream mixture. Freeze the moulds for 1 hour to set.
  • Stir ice creams to evenly distribute candy cane pieces and insert a popsicle stick into the center of each. Return ice creams to the freezer to set for at least 8 hours or overnight.
  • After firming up, unmold and serve directly from the freezer.
