Chill out with these delicious festive ice cream treats!
Ingredients:
  • 190.00 gm dark choc melts
  • 4.00 litres vanilla ice-cream, softened
  • 3 x 52g Cherry Ripe bars, very finely chopped
  • 1 tsp strawberry essence
  • Red food colouring
  • 125.00 ml dark choc chips
  • 1 tsp peppermint essence
  • Green food colouring
Instructions:
  • Prepare two 3cm-deep, 20cm x 30cm lamington pans by greasing them and then lining the base and sides with baking paper, ensuring 2cm overhang on all sides.
  • Create a heavenly blend by mixing together ice-cream, Cherry Ripe, and essence in a bowl. Infuse a rosy hue with food colouring. Ensure thorough incorporation. Transfer to a prepared pan, cover the surface with plastic wrap, and let it freeze overnight.
  • Create a delightful forest: Mix together ice cream, chocolate chips, and essence in a bowl. Add a touch of green food coloring to tint the mixture. Spread the concoction into a prepared pan, then cover the surface with plastic wrap. Freeze overnight to set.
  • Prepare a tray lined with baking paper. Cut star shapes from the strawberry ice cream mixture using an 8cm cutter, then place them on the tray. Make a small slit at the base of each star and insert a paddle pop stick. Freeze for at least 4 hours or overnight. Repeat the process with the peppermint ice cream using an 8cm tree-shaped cutter.
  • Place the chocolate melts in a microwave-safe bowl and microwave on medium-high (75%) for 1 to 2 minutes. Stir with a metal spoon every 30 seconds until smooth. Allow it to cool slightly before using.
  • Place the chocolate in a small sealable bag. Cut a small hole in one corner of the bag. Decorate the ice-creams by piping the chocolate onto them swiftly. Freeze for 1 hour or until firm. Serve and enjoy!
